Sweet & Savory Sunday: Sugar Cookies

In honor of the day of love, I thought I'd post my favorite sugar cookie recipe.  Last year I threw a V-Day Themed baby shower for my friend, J, and made these in heart shapes & frosted them in conversation heart colors.  I've tried different glazes & icings with them over the years but nothing can quite compare to some good ol' cream cheese frosting.  Yum.  This recipe is from a friend, Amy, and has a few of my modifications.  I love them because they're soft & delicious.  Roll them out plenty thick & take care not to overcook them.  They should not brown AT ALL.  Good luck & Enjoy!

Caroler's Sugar Cookies

INGREDIENTS
1 c. sugar
1 c. butter, room temp
2 eggs
1/2 tsp. vanilla
3 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder

DIRECTIONS
  1. Cream butter & sugar until fluffy. Blend in eggs & vanilla. Add combined dry ingredients.  Mix well.
  2. Roll in a ball, cover in plastic wrap & chill for at least 2 hours.
  3. Roll out on a lightly floured surface to 1/4 inch thickness.
  4. Cut with cookie cutters & place on an ungreased baking sheet.
  5. Bake at 420 for 6-8 min (depending on the size of the cookie).  The top will feel slightly firm to the touch when done.
  6. Cool completely before frosting.
CREAM CHEESE FROSTING
Mix 1 cup of powdered sugar with 1/4 c. butter (room temp), 4 oz. of cream cheese (room temp) & 1 tsp. vanilla.  Beat until smooth.  Add another cup of powdered sugar & mix until smooth.
1/2 tsp. salt
