Sweet & Savory Sunday:The Pork Dilemma

Pork is a difficult meat for me.  A lot of the recipes I've tried have only been so-so.  Pork is a meat I couldn't handle at all when pregnant & since then, it's taken some very particularly good recipes to get me to even eat this part of the pig at all.  Here are two of my faves to help you with YOUR pork dilemma! Sweet Pork Tenderloin - I got this recipe from my mother-in-law years ago.  What I love about this recipe is that is SO EASY and good enough to serve for a nice dinner, such as on a Sunday or when you're having people over.  It also makes great leftovers on Sandwiches or however you'd like to try it!  Who doesn't LOVE a good crock pot recipe?!?!   2-ish lbs of Pork Tenderloin (different from Pork Lion) 1 bottle of Chili Sauce (found by the cocktail sauce & ketchup) 1 can of jellied cranberries 1/4 c. brown sugar Place tenderloin in a smaller crock pot sprayed with Pam.  Mix Chili Sauce, cranberries & brown sugar....

Sweet & Savory Sunday -- Wild Rice Hot Dish, Asparagus & Whole Wheat Rolls

I've always loved to bake but when I was younger, that mostly meant chocolate chip cookies.  Well the last few years, I've really taken to broadening my horizons & its started to include other delicious desserts as well as breads, rolls & yummy meals.  I'm no chef & I'm not original.  Truth be told, for the past year, at least 90% of the new recipes I've tried have been from here . As I've gotten better at baking/cooking & playing around with flavors, I've started to experiment and adapt the recipes I try.  I love to share recipes so I decided that [for now] I'm going to post a recipe I want to share each Sunday evening.  Like I said, most of them are thieved from Mel so I'm not claiming them as my own but I'll always give credit where credit is due! Right now I'm 3 weeks into an 8-week challenge that forbids sugar, white flour, etc... so needless to say I'm eating healthy.  But other than desserts, my main course meal...

Its a little chilly

Image
It's been a little chilly here in Texas but on most days, except the really cold or rainy ones, it doesn't stop us from walking!  Now that J is officially a SAHM (YAY!) we get to go on walks with her & K!  On one particularly cold day, we bundled all of the kids up & thought they were definitely cute enough to take some pictures!  Can you believe K is only 6 weeks older than Max?  Love all 4 of these cuties! And this was just too cute not to share!

Black Bean Chili & Whole Wheat Cornbread

I'm sharing this for all of my fellow 8-week challenge contenders as well as anyone who wants to try a delicious healthy meal on a cold day!  I got the Chili recipe from my sister-in-law years ago & make it often.  I found a whole wheat cornbread recipe last week & tweaked it a bit.  Enjoy! Thirteen this Thursday

Yeah, I've got a lot on my mind... 1.  I've been wanting to get these last 10-15 lbs of baby weight off but can't seem to find the time.  I tried the running thing but my body is not meant to run.  So after reading my cousin-in-law's blog, I signed up for an 8 week challeng e.  I'm excited about it.  It's hard but I'm feeling good.  I really like that it is about the whole body. 2.  To go along with my new & healthy outlook, I bought a pass from one of those daily deal websites for a month-long boot camp today.  Get this-- $20.  Yup, you read that right.  $20 for one whole month.  I'm going to start my month in a couple of weeks.  I'm SUPER excited to get my rear end kicked! 3.  I gave up potty training Nathan.  He was doing OK but having lots of accidents & my mental health is fragile at best, so back in a diaper he went.  I'm a wimp, I get it.  I'm owning it.  Moving on... 4.  Las...
