Black Bean Chili & Whole Wheat Cornbread

I'm sharing this for all of my fellow 8-week challenge contenders as well as anyone who wants to try a delicious healthy meal on a cold day!  I got the Chili recipe from my sister-in-law years ago & make it often.  I found a whole wheat cornbread recipe last week & tweaked it a bit.  Enjoy!

1.      Chop onion.  Cut squash and peppers into bite-size pieces.  Drain and wash black beans.
2.     Heat oil in stock pot over medium heat.  Add chopped onion and squash.  Turn heat to med-hi and add peppers.  Cook until tender (5-7 min). While cooking veggies, add cumin, chili powder & basil.  Stir well.
3.     After veggies are tender, add salsa and tomatoes with juices and stir well.  Cook uncovered for 3 min while stirring.
4.     Stir in beans and bring to a boil.  Cook uncovered until beans are heated through.
